I never got to the point arthritis was debilitating me. But I had certain joints that let me know they were there periodically. One little finger that would bring tears to my eyes should I hit the joint just very lightly in the wrong way. Various back joints and back pain. Pain in both knees.

When wife and I went low carb ketogenic (which naturally eliminates most of the things you listed you quit eating) in a months time those pains were gone. Five years now and they have not came back.
