If he's that wild, that he truly can clear a 7' fence, I'd pop that trailer gate and turn him right back out in the pasture he was in. Get ahold of your deer hunters or buddies that process their own meat, shoot him and bleed him out on the pasture where he's calm, and grind him up. Dumping one that's truly that psychotic at a small local locker, or even the local sale barn, is a great way to get your name remembered.
