Blooming where I am planted!

Just wondering what some of the more unusual ingredients are (i.e., other than milk, eggs, flour, sugar, vanilla, etc.) you keep on hand all the time just in case you want to whip a baked good up that particular day, to save a trip to the store.  You know, things you can't make a recipe without.  Here is mine:

Cake flour

Cream of tartar (for angel food cakes, etc.)

Canned pineapple

Sour cream (I keep this in the freezer)

Ricotta cheese (I keep this in the freezer)

Buttermilk (in powdered form)

Almond extract
