Subject: Rhubarb Custard Bars ?



central - east central Minnesota -

Not sure if this is a bar recipe or more a cobbler type desert - what ever, it's very good.

Crust: 1 Cup butter (should be 2 sticks),  ¼ C sugar, 2 C flour

Filling: 2 C sugar,  7 Tbsps flour,  3 eggs,  1 C whipping cream,  5 Cups Rhubarb (cut up)

Topping: 8 oz pkg cream cheese - softened, 1 tsp butter, 2 C powdered sugar, 1 tsp         vanilla 

Preheat oven to 350 °F. in a mixer bowl, cut butter into sugar, mix in flour, untill mixture resembles coase crumbs. Press crumbly mixture into a greased 9x13 inch baking pan (glass works great). Bake for 12 minutes.

Mean while, make the filling. Combine sugar and flour, wisk in eggs and whip cream. Add Rhubarb pcs (if wanted, add a bit of grated lemon or orange rind). Pour mixture over crust out of oven. Then bake for 45 minutes. Cool completely.

Beat the cream cheese and butter. Stir in powdered sugar and vanilla - use to frost bars in pan . . .. .

This is really good, but as you can tell - very rich !  That's why it must taste so good   lol
