| So Dawn, what do you do with the egg yolks left over from making angelfood? Dad got into a "hobby" of baking angelfoods in a big way in later years when he was housebound and couldn't do much else besides cook. As you know, it takes a dozen or so egg whites to make an angelfood cake. Dad used to just scramble the yolks for the cats. Then he got started making sponge cakes and noodles with the yolks.
He bought huge jars of cream of tartar and 50 lb bags of cake flour for his angelfoods from the local Sysco Foods outlet. A power outage would not slow him down as he had a gas stove. Then I had to bring him my cordless electric drill so he could stick one of the mixer beaters in it and keep on bakin'!
