Those sure don't look like American Crickets. They look like locusts or grasshoppers.
20 years ago I was at a meeting in Oaxaca Mexico and the last night we had a banquet. One of the sides on our plates was grasshoppers (just their legs IIRC). I tried nibbling on one, just because, but instantly started gagging so that was that.
