North Central Illinois | I've done similar. Sorghum Sudan or sudangrass seeded in July is usually ready to cut 40-50 days after seeding. Here's some from 2019 that I seeded July 25 after baling straw and doing some dirt work. Normally could seed 2 weeks earlier. If after the first of August I think oats and peas are a better option.
First photo is September 6 and second one is September 22. Grazing or cutting before September 7 usually has some regrowth worth grazing. After mid September there's not enough heat to get regrowth.
Peak forage production would be to drill SS mid July, take one cut early to mid September, then drill rye or triticale for fall grazing and spring forage harvest.
