Wife just cooks with garlic salt and pepper in roaster with some water in added in about a cup of water, so it doesn't burn bottom of pan. Around 375-400 degrees, 3-4 hours. Pretty well done 3/4's of the way done. Then pour a cup or so wine over top of meat. Cook about a hour. Got to be well down for us. Save some wine for dinner. Also have to have potatoes with meal, you pick how you want them.


How big of roasts are you dealing with? I have hair sheep so a little smaller than the wool breeds. I have the butcher cut legs in half so lambs make a 3-4 lb roast and mutton ewes 6-8 lb. They're done to my liking in a little under 2 hours for the small ones and just under 3 hours for the bigger ones.
