Here they have 1/2 flag, 3/4 flag, 5/6 tackle through YFS. 7/8 as Jr high, then 9-12 as JV/V. My 16 year old got in on 3/4 tackle before the safety folks got a hold of it and made 3/4 flag. I'd have absolutely no problems with a 5th grader playing 5/6 tackle. Our YFS team runs basically the same plays as the Jr high and high school, so it does help a lot with play development. You learn the fundamentals early too. I've got a freshman who went out for the first time this year and while he's a quick student of the game, it's obvious he doesn't have those years of practice behind him that his sophomore brother does who has played since 1st grade. Here the FYS games are Sunday afternoons. 6 or 8 game schedule. I forget now. We always made a great family time out of it. Chuch, then some new restaurant close to the game, or a picnic at a park or something.
