I’ve ruined more briskets than I care to count on my traeger and here’s what I’ve learned. I run it at 250 and cook the brisket to temp irregardless of time, normally it takes 8 or so hours, I also wrap in butcher paper. All of the ones I ruined were attempted at 225. As far as bark I don’t think you’re ever going to get what you’re used to with pellets.
