| I used to smoke quite a few pork butts for fundraisers in the area, and I'd always assume a 50% loss from raw weight to cooked weight, and .33# per sandwich. Most aren't using a 1/3 pound per bun, but it always allowed me to make sure I had enough cooked product on hand. The joys of those fundraisers though, was packaging the leftovers up, and auctioning them off for a little extra cash for whatever we were raising money for. | |
