 NS Canada | I got on a big kick this winter making many loaves in a machine. I've yet to make one that isn't denser than I'd like. A couple were real dense, but most are quite edible, just a heartier loaf than you'd be used to... tasty as all get out though.
I added some yogurt and heavy cream, rather than water or milk in my last loaf. It was a bit lighter, but tasted very much like a dinner roll. Mines a starfrit with nut dispenser. It's ok, but nothing special.
For consistency I use a scale, rather than measuring cups. I haven't messed with the time settings for the mixing process, perhaps I could gain some softness there. But I've made close to 4 dozen loaves this winter, and can bang out a pretty decent loaf.
