Nitrates would only be a problem if it is drought stressed when you cut it or it had been optimum growing conditions and then you get a couple cloudy days and cut it (the photosynthesis cant occur at the rapid pace it was previously occuring at and then nitrates levels would rise in the leaves until optimum growing conditions could occur again.)
