They are talking about how fine the limestone in ground up. Ag lime is just ground limestone or calcium carbonate and the finer the grind or particle size the quicker it becomes available to do what you put it on the ground for, raising the soil pH.
Most Midwest states have "lime laws" on the books the specifies the grades or standards that ag limestone must meet. They test the stuff by shaking it though a series of different size screens or sieves and measuring how much stays one each sieve.
