Yes, that should work well.

Ours in set up slightly differently in that our tanks heat the water to 140°, and the tankless boost it to 180°. So ours always comes on, but only for the wash sinks. All other hot water in the barn is just direct from the tanks at 140° so the tankless doesn't get used then.
