I have a pair of the poly covered May Wes ones on my head.

They pivot at the front and are spring loaded at the back along with a chain to keep the spring held captive.

You can see from the picture that they hang down fairly far  and should bend the stalks over with the head up higher. The spring lets them float with the head height yet keeps down force on them to bend over the stalks. I can't give an exact answer as I usually run my head close to the ground to get more agressive stalk chopping out of my knife rolls.
