I still recall my Mother baking the jack-o-lantern in the oven after halloween to make pumpkin pies. 

No doubt there are specific kinds of pumpkins that are used for commercial pie filling, but Mother never let anything go to waste.  I don't recall any of her pumpkin pies NOT being good to eat, and she made a lot of them.

Far cry from today's society, where we throw away everything after a moments use.
