There is no reason that tracks or tires would make any difference to anything which is in front of the differential, so yes, it's possible to have a varible transmission with tracks.

From a practical viewpoint, the problem is that you are going to have to build the tractor yourself because AGCO doesn't offer it in the 700 or 800 series platforms. Maybe Deere might have something coming for the 30 series?
