If all your buildings get power from the same main power transformer, then I would consider copper for your application. If you are getting power from different transformers, there could be a differential voltage between them and your network cable becomes a ground loop. In that case, use fiber or wireless.
You can get pre-terminated fiber pretty cheap these days. You would need a conduit for it though.
