If you're going to bury copper, use something rated for direct burial. Alternately, plow in some conduit and pull wires through that.

If all your buildings get power from the same main power transformer, then I would consider copper for your application. If you are getting power from different transformers, there could be a differential voltage between them and your network cable becomes a ground loop. In that case, use fiber or wireless.

You can get pre-terminated fiber pretty cheap these days. You would need a conduit for it though.
