I have a laptop with a ton of data on it. From hundreds of word documents and excel files. What is the best way to back up a laptop? Can it be done on a flash drive? Don't know what size of file it would be or how to go about doing it.

Don't use flash drives, they are notoriously unreliable and can just die at any moment. Hard drives tend to die slowly over time, and even if you do have a sudden failure of a drive there is a pretty good chance you can recover most of your data by paying someone who specializes in data recovery. Flash drives are pretty much unrecoverable when they die.

I personally prefer a cloud based backup solution. I think it is the simplest in the long term, and if you do need to restore data, it is pretty simple and quick.
