That's generally known as data wrangling...and for that, it's hard to beat Python + pandas.

True, this measure probably skews to the DIY direction. A C++ or Java programmer is still in high demand, but I imagine it depends a lot on what you're doing. Working on Web site back-ends, you should know PHP and SQL. Data analytics...Python/Julia, R/SPSS/SAS, and at least one no-SQL data store. For computer graphics, something entirely different again.
