The man who does our custom beef butchering hangs it in his refrigerated room for 30 days, then cuts it up and freezes it.
He wraps it in plastic and paper, and moves it to his freezer.
We keep it frozen for a year or 2, and it is just as good as when it was first frozen.
I think you can keep beef refrigerated for 30-45 days and enjoy it with no problem at all.
My grandparents in Skagit County, WA hunted and butchered in late summer, early autumn, and kept meat hanging in a shed all winter, well into late spring.
To the best of my knowledge, there was never an issue with meat gone bad, every pound of it was cooked and enjoyed.
