She has used originally just some plain yogurt from the store. She also added some probiotics that were supposed to have some good bacteria for the gut. After the initial batch she just kept her own starter from that original batch, each new batch keeping back starter for the next batch. When we leave for the winter of course that is the end of it so she has to start over. I forget how long you can keep the starter in the fridge. Maybe two or three weeks. One batch in the Instant Pot would last us about a week.

We have not started back up this year yet but she mentioned it the other night. We might start up again. She has several other low carb deserts she has been making instead.

This is the probiotic she used along with the bought plain yogurt. It is not cheap. One of the doctor gurus had recomended it from 4 years ago. Seems like maybe the "wheatbelly" doctor guy. Supposed to have a strain that is particularly good for the gut. You can get a start from any plain yogurt though as long as it is advertised as "live" culture. You would not have to add the probiotic.
