I trim everything off and out of the heart that doesn't look - eatable, leaving nothing but pure meat looking stuff. Then slice it as thin as you can and marinate it in a solution we called "Korean barbeque". Throw it on the grill and it cooks extremely fast - within minutes. Tastes great and you can't fix it as fast as "most" people will eat it....provided they can get past the thought of eating organs LOL.
