I pretty much agree with what John W says.

I think when it comes to bread and carbs, about the best you can do is "less bad". I don't see any of it being particularly healthy. It is food to keep one from starving, not a health food.

My wife used to grind her own flour and she always baked home made bread. All whole wheat, REAL whole wheat, was edible and that's about it. Pretty heavy. She even tried adding gluten, before gluten became a bad thing. Mixed with about half white flour and it was pretty good.

I don't know about the sour dough bread, although my wife did try some for awhile. I would guess the bugs would take some of the sugar out so would guess slightly better than regular white bread, but that is just a guess.

Grains are not great nutrition. Not even in the ball park with meat or animal products. In my opinion. Obviously not the nutrition industry opinion.
