Your headed down a slippery slope. If you are off on your estimate of cuts or lbs theres a good chance the buyer will feel cheated or shorted even if they dont say anything.

Trying to go from live to hanging to cut weights is very hard fir a end consumer to understand for the average consumer. The ones who know typically already have a guy they get a whole or half from.

Following different facebook groups there is always posts about someone feeling cheated by the butcher or farmer or customer backing out when its time
To butcher.

I did a few before saying screw it and just retailing out the packages and use a usda inspected plant. If we didnt have the “free” popcorn cleanout to feed the beef and the boys to do the feeding i wouldn't even mess with it.

When the mom/family has $xxx to spend she knows exactly what cuts and lbs she is getting. No confusion.
