The sulfur in the AMS is what binds to the hard water ions to condition the water.   That keeps the hard water ions from tying up your chemicals.

There is a reason that a lot of herbicides specifically say to use AMS and its not just to make you suffer.     FWIW, you can get actual liquid AMS.  It won't be cheaper though.
