We used to do the pickled egg thing in college. JoBob pretty much has your recipes. We would just brine the peeled eggs and put onion in. We even got creative and started putting green, yellow, or purple food coloring in the eggs (not all in the same jar). We usually let them soak for 3 weeks before we ate them.
