I myself actually like a select cut for prime rib(actually rib roast). Choice/prime gets to rich if it's cooked right. Don't care for prime ribeye either, just way to rich for my liking.

Can you explain what you mean exactly by "too rich"?

I'm struggling to understand the problem.
