We have a cold room in the basement, outside walls of course.   Well insulated and has a fan to bring in cold air from the outside and a vent.   Fan has two thermostats, one inside so it starts the fan any time it's above 34 degrees inside.   The other thermostat has the sensor outside and will shut it down if it's above 40 degrees outside. 

So, in October it usually just runs at night and now it's to the point it runs during the day too as needed and stays plenty cold.   We store the potatoes in a large bin as you can see in the picture.   This was last years crop.   We actually a few less this year and yes we really do use that many potatoes although some went to the chickens towards the end.   Our kids get some too.
