The neighbor boy makes syrup from walnut trees. I have a bunch of walnut trees in the creek. He has buckets hanging all over the place with a tap to flow the stuff in the buckets. Best syrup I've ever had. He started about 10 days ago with the tap. He seems to start the same time every year. I don't know jack crap about this, but just saying the fluid is flowing.
