Subject: Tavern/loose meat sandwich

NE NEBRASKA
Many years ago I ate a sandwich at a road house bar in South Dakota. I believe it was called a tavern or loose meat sandwich. It was really good but I've never had much luck duplicating it at home.

I thought the only ingredients were ground beef, mustard, and brown sugar. But it's kind of blah so tonight I added seasoning salt and pepper which helped.

What am I missing or doing wrong?
