Yes, you do do need to get bigger to get the efficiencies; where you get under the table labor I'd like to know. For any place you read about doing this there are far more that follow the rules. I can think of the owners or managers of around 20 dairys in the northeast over 1000 cows, none of them pay under the table. Many of them have built or will be building new employee housing, knowing the value of finding reliable employees that will stick around. Having to constantly bring in and train new people is trouble for any size operation.
That being said we have almost 600 milking and dry, no plans for any growth right now. We have a good balance and are profitable. If could have lived as well at the 150 cows we had 25 years ago I would have stayed there. But it's a lot tougher when you're smaller, the next generation just doesn't want to keep doing things that way.
