Subject: RE: homemade ice cream

Western Oregon
Wife and I can't use cows milk. I use 1 cup raw goat cream and 1 cup goats milk, 1 egg, 1/4 cup honey and a sprinkle of sea salt. Heat cream, milk and egg to just before boil (scald) over medium heat, whisk continuously. Near the end add honey and salt and continue to whisk. Let cool in refrigerator, whisk, add to frozen aluminum ice cube tray or bread pan and freeze. For creamier texture, remove from freezer, when workable, put in mixing bowl and mix with hand mixer. At this time you can add other flavorings, cover and keep in freezer.

A good summer recipe is raw goats milk, I pour 2 cups right off the jar with the cream, add 1/2 cup honey and 1/2 cup frozen fruit. Mix with hand mixer or in blender until "fluffy". Freeze until the texture you like. Heat kills the good part of raw milk....James
