As I recall, the Insight when it was first available would paint coverage even when no product was being applied such as with a pump failure etc. Some time through the evolution of liquid control this was changed. Now the map will only paint when flow is detected through the flow meter.
The various colors you have seen in your testing seem consistent with what we see with the older Liquid Product Control module and our InCommand 1200. The fact that you were not actually spraying is why you did not see any green indication on the boom sections.
The various colors should give you an indication as to whether the boom is OFF due to some setting such as the Master or the section switch, enabled but not spraying due to no flow meter action or enabled and actually spraying (green).
