I have done this many times! First start with RED ripe jalapenos. Green ones are no good for this. Wash them, and cut them in half. Mexicans leave them whole, but they smoke dry them longer. Then put them on the smoker at about 150-170*F and leave until dry, but not burnt. Should take 6-8 hours. Throw some ripe habaneros on while your at it!

I use an electric coffee grinder to make the powder. One of those $12-15 units you can get at any home store. The first pot of coffee after using the grinder on peppers has an interesting flavor!

Another method would be to smoke them for 2 hours at the above temperature, then transfer them to a fruit and vegetable dehydrator, to finish drying them.
