Years ago, and before Mom passed on, I asked her to show my little Mexican wife how to make peppernuts. She always makes a least one batch this time of year. In fact she made some just last week. The recipe Mom used and now my wife uses is with the spices. Every one of the spices you mentioned are in the ones my wife makes.
I see you still make yours the old fashioned way. Several years ago a neighbor of mine made a peppernut maker machine. He gave the prototype to my wife to try out. As you know a good peppernut should not be over a half inch round, this machine was making them from ¾ to as big as one inch round. Wife sent it back to him and told him to redesign it. In few days he brought over a new one. Wife had to make a second batch that year to see if the machine made them the right size. They were perfect.
