Soak your chicken pieces in buttemilk over night in the fridge... Heat 1/2 to 3/4 inch oil in a skillet......on a plate season 2 cups flour with pepper and seasoned salt (can add other seasonings if you want for zip like cayanne pepper).... beat 4 eggs and 1/4 cup milk in a bowl..... When ready to fry dip chicken in the egg mix then in the flour mix... put the chicken pieces in the HOT oil and fry on each side until golden brown.... put a cookie cooling rack on a cookie sheet with sides and put the chicken pieces on there in a 350 degree oven for about 30 minutes...... can also put all the chicken in a roasting pan like my grandma did and finish off in the oven but the coating will not be crispy.....
