Alabama | I can't really think of a good recipe right now but I do have a tip for you. My mother does this.
When you have leftover veggies put them in an unused margarine tub or other freezer container. After each meal when there was corn or some kind of beans left over she would put them in this bowl and stick it in the freezer. As each dinner had leftovers she would continue to do this..just add the new on top of the frozen. Stick it back in the freezer. When you get ready to make vegetable soup, all you have to do is add this to your stock. | |
