NW Washington | Beet greens are about as good as greens get. Just steam them a little or toss them wet into a covered hot fry pan with a little extra water and butter and cook for about 5 minutes. We put a little vinegar on them on the plate.
Swiss chard is basically a beet with no beet root and they are good too.
The biggest problem I have with beets or chard are those darn leaf miners that burrow into the leaves. Once they get started there is nothing you can do, and I have never seen the adult the does all the egg laying on the plants. | |
