| I've got a fantastic smoked salsa recipe and have no idea how to safely can it. It's the Hey Grill Hey recipe. Tomatoes, onion, jalapeno, ciliantro, and some lime juice. Every recipe I've seen for salsa adds vinegar. I don't want to. Canned diced tomatoes don't add any. Anyone know how to safely can salsa without adding vinegar? I'm perfectly comfortable pressure canning if that's what I'd need to do.
