We prefer to put the whole fish in ice water alive.

The cold shock causes the cold blooded fish to go into survival mode. The blood is automatically drawn from the muscles to the vital organs.

This will pull out most of the blood in the meat.

Also makes them easier for me to clean as they are not flopping around.
