About what my wife does but she does not like the connective tissue that runs through the liver.

So she goes to the extra effort of cutting out this part of the liver before cooking. This ends up being bite size chunks.

Then she fries these chunks up in bacon grease and adds copious amounts of onion. She loves onions.
