You learned the hard way that Yukon Golds are probably one of the worst potatoes to fry. Russets are hard to beat. You need to soak them in cold water with a little salt before frying and get your fryer up to at least 450 if you can. When you dump the fries in it will drop to around 400 and if you can hold that temp they will turn out really well. Oil can make a difference too but probably just use whatever you are using for the fish.
