Box beef refers to all the primal cuts, packaged whole, uncut.
Chuck, loin, brisket, rib, round, brisket, plate and flank. It has yet to be processed into steaks, roasts or burger.
Basically this would be hanging weight price per 100 weight, is how I look at it. I could be wrong, but I’ve already been wrong this week.
