Berkshire usually have a slightly darker red meat and produce good marbling.

Anything raised on dirt will be better than the fat free tasteless pork you can get most places these days.

As far as harvest weight, whenever they are finished. In my lifetime that has moved from getting docked for pigs weighing over 220 to 300+. Ones we get usually weigh from 275-325. Sometimes they are over fat, sometimes not.
