So I’ve been trying to make a cinnamon swirl bread. Never made bread before but have tried this recipe a couple times. I mix everything together then knead it and let it rise. It usually rises to about twice the original size. Then the recipe says to punch it down and roll it out into a sheet, add cinnamon, then roll it up into a loaf and put it in a pan and let it rise for another hour. Well the second rise it doesn’t rise much and my bread comes out like a dense crusty loaf instead of soft and airy. Any tips or ideas what I’m doing wrong?
