There is a lot to the rest of the story.
By their standards makes the cow look terrible. But in reality they take the lowest quality feed and turn it into the most nutritional superior protein and fat. Essential amino acids that either can't come from plants or nutritionally superior to plants.
From a conversion standpoint, ruminants are the best at upgrading things not palatable to humans to the very best quality nutrition.
