| I rough figure 60% live to hanging and 60% hanging to boxed. At least in all my research that's ballpark where they seem to fall. How you cut it and how many bones you get will affect the final %.
One other thing to consider. If that 276 was a hanging half, it (as you said) was small. The bone to meat ratio on what had to be an unfinished animal is going to be much different than a 1400 lb finished steer.
