Pannukakku
6 eggs
1 1/2 cups milk
1/4 cup sugar
1 tsp. vanilla
1/8 tsp lemon zest
1 1/2 cups plain flour
1 tsp salt
1 tsp baking powder
1/3 cup butter

Whisk together the eggs, milk, sugar and vanilla until creamy. Stir in lemon zest. Sift together flour, salt, and baking powder and stir into egg mixture. Allow batter to rest for 30 mins.
Preheat oven to 450. When 30 min. rest is about up, put butter in oven-proof frying pan. Place pan in oven and let butter melt without browning. Remove from oven and using pastry brush coat
sides of pan with melted butter. Pour pancake batter into hot, buttered pan and bake for 15 to 20 minutes until fluffy and golden brown.

As you can see, I served with maple syrup and fruit. However, many recipes suggested using jam and whipped cream as a topping. I used a pan that is 9 inches in diameter. It will deflate some as it cools. We ate the rest for breakfast this morning. It was even more custard like left over. This was the first time that I made it and it turned out perfect so I am sticking wth this recipe!
